This delightful potato dish is of uncertain origin:  France?  Belgium?  Spain?

Whoever first created this dish, wherever he or she was, my most humble thanks for the kind of snack that gives such comfort and companionable sustenance with a beautiful blend of crispy crunch and soft warm fluffy potato.

According to wikipedia: “Professor Paul Ilegems, curator of the Frietmuseum in Bruges, Belgium, believes that Saint Teresa of Ávila fried the first French fries, referring also to the tradition of frying in Mediterranean cuisine.”

While I am sure this is not true – I want to believe that she was sainted for frying the first fry.
